How the calculation works

Revenue is the plate price times plates sold, and the food cost is the per-plate cost times the same count.

Profit subtracts the food cost and both the fixed monthly cost and labour, which do not change with plates.

The margin shows whether the truck covers its fixed costs at the volume it actually sells.

Why include fixed costs?

Rent and utilities are paid whether you sell or not, so they must come out of revenue.
